  13. For gatta :-
  14. 1 cup cheak flour
  15. 1 tbsp oil
  16. to taste Salt
  17. Pinch baking soda
  18. 1/4 tsp Red chili powder
  19. 1/4 tsp turmeric powder
  20. 1/4 teaspoon cumin seeds
  21. 1/4 tsp carom seeds
  22. 1/4 tsp garam masala
  23. 2 tbsp curd
  24. For gattas fry
  25. 2 tbsp oil

Instructions to make to make Rajasthani gatta pulav

  1. Wash rice and soak it in water for 15-20 minutes. Drain and keep aside until needed.
  2. Mix gram flour, turmeric powder, red chilli powder, salt, soda bicarbonate, cumin seeds, half teaspoon ginger, and yogurt. Add a little water to make a stiff dough.
  3. Divide the dough into 8 equal portions and Shape each portion in to a 8"long thin cylindrical roll.
  4. In a large deep pan boil water until it comes to a boil. Once the water comes to a brisk boil, add the gattas into the water and boil until they comes floating to the top. Once they come floating to the top, boil for another 3 to 4 minutes.
  5. Drain the cylindrical gram flour rolls from the water and cool. Cut each cylinder into smaller pieces,(1/2 ") and keep aside.
  6. Take a big pan and heat 2 tbsp oil in a pan.Add gatta and shallow fry till golden brown. Keep aside it.
  7. In a pan add one tbsp ghee and add cumin seeds, cloves, cinnamon, cardamoms, garlic and ginger and fry for a minute till aromatic.Now add onions and saute till they turn golden brown.
  8. Add chilli powder, turmeric powder, garam masala and salt, and mix well.
  9. Add rice and saute gently for 2 minutes on a low or medium flame.pour 3 cups water and stir.
  10. Cover and let the rice cook on a low flame, till the water is absorbed and the rice is well cooked.
  11. Now add gattas and gently mix and cover and let cook for 2 minutes.Turns off the flame and let the rice stand for 5 minutes.
  12. Serve the gattas pulav hot with raita or curd.
