  20. 2 tbsp Lemon juice

  23. For uncooked Salsa~
  24. 1 tomato (finely chopped)
  25. 1 onion (finely chopped)
  26. 1 tsp red chilli powder
  27. as required Coriander leaves
  28. as per taste Salt

  30. as required finely chopped spring onions
  31. 1 packet Nachos (any flavour)

Instructions to make to make Mexican Burrito Rice

  1. Rice~ In a pan heat 2 tspn oil. Add finely chopped garlic. Saute until slightly brown. Now add onions and saute for a minute. Add chilli flakes and again saute for a minute.
  2. Add the three bell peppers and saute well for a few seconds. Add boiled corn and mix well. Add ketchup and salt to taste. Finally add the rice and give it a good mix. Keep it aside.
  3. Now in another pan heat 2 tspn oil. Add garlic and springonions. Saute for a minute and then add chilli flakes. Add finely chopped tomatoes and cook on a medium flame until tomatoes turn soft.
  4. Add tomato ketchup, boiled rajma and salt. Add a little water. And mix everything well. Keep it aside
  5. For the uncooked salsa, mix all the ingredients together in a bowl. Keep it aside.
  6. For the sour cream also bring all ingredients tother and give it a good mix. Keep it aside.
  7. Now for Assembling... Take a big bowl. First put Rice with veggies. Then layer it with refried beans. Then add the uncooked salsa and finally add the sour cream and nacho chips for garnish.
