Ingredients and spices that need to be Take to make Vegetables Matta Rice with Thakkali Pachadi and Sambhar:

  1. For Rice :-
  2. 1/4 cup tender coconut water
  3. 1 cup red rice
  4. 1/2 tender coconut malai
  5. to taste Salt
  6. 1 onion
  7. 1 tsp urad dal
  8. 1 tbsp chana dal
  9. 1 pc brinjal
  10. as needed Few curry patta
  11. 2-3 lady finger
  12. 2-3 tindora
  13. 2 tbsp. Oil
  14. 1 pc. Dry red chilli
  15. 1 tsp garlic powder
  16. 1/2 tsp chilli powder
  17. 1/4 tsp. turmeric powder
  18. 1 tsp Mustard seeds
  19. 1 pc. Potato
  20. 2 tbsp. tamarind pulp
  21. 1/4 cup coriander chopped
  22. For Thakkali:-
  23. 2 .tomato
  24. 1 pc. Onion
  25. 1/2 cup dry coconut
  26. 3-4 tbsp curd
  27. 1 tbsp oil
  28. 2 pc. green chilli
  29. 1/2 tsp. Mustard seeds
  30. as needed Few curry leaves
  31. 1/2 tsp cumin seeds
  32. to taste Salt
  33. 1/4 tsp. asafoetida
  34. 1 dry red chilli
  35. For Sambhar:-
  36. 2 tbsp. Tuver dal
  37. 1 tsp. Chana dal
  38. 1 tsp moong dal
  39. 3-4 dry red chilli
  40. to taste Salt
  41. 1 tbsp dry coriander seeds
  42. as needed Few curry leaves
  43. as needed Khada masala
  44. 1/2 tsp turmeric powder
  45. 2 tbsp tamarind
  46. 1 tsp mustard seeds
  47. 1/2 tsp asafoetida
  48. 1/2 pc. drum stick
  49. 1 pc. potato
  50. 1 pc. onion
  51. 2 tbsp. Sambhar masala
  52. 1/4 tsp fenugreek seeds
  53. 2 tbsp oil
  54. 1/4 cup bottle gaurd
  55. 1/4 cup coriander
  56. 1 bay leaf
  57. 1 tsp rice
  58. 1/4 tsp .black pepper
  59. as needed Few curry leaves for tadka

Instructions to make to make Vegetables Matta Rice with Thakkali Pachadi and Sambhar

  1. Vegetables Matta Rice:-Soak red rice for 2hrs. Add 1glass water salt nboiled in cooker make 2-3whistle and strain.
  2. Heat oil add all veggies garlic powder salt and saute add 1/4cup tender coconut water cover the lid for 5-7mins. on slow flame. Add boiled rice With tender coconut malai. saute ladies finger and add in a rice. Add tamrind pulp mix well and serve.Garnish with tender coconut malai.
  3. Thakkali Pachadi:- Chopped tomatoes and boiled in water. Mix tender coconut malai onion chilli 1tb curd salt in a mixie jar and churn. Add boiled tomato again curd and churn mix well and churn. Serve in a bowl.For tadka:-Heat oil mustard cumin seeds curry leaves and dry red chilli. Pour ona tomato mixture. THAKKALI PACHADI IS READY.
  4. For Sambhar:--Roast dry dal in a pan one by one. and take out in a plate. Now roast all masala and khada masala. Take in a mixie jar add asofortida turmeric powder red chilli powder mustard seeds and oil. Churn and make dry powder.
  5. Heat oil add mustard seeds red chilli and all chopped veggies saute add 2tbsp powder. saute and add water cook on a slow flame add sambhar masala salt red chilli powder turmeric powder and soaked tamrind cover and simmer 15-20 mins. Sambhar is ready.
  6. Tasty delicious Kerela thali is ready to serve. With coconut water
