  1. For Rice:
  2. 1 cup basmati rice
  3. 1 tsp ghee
  4. 1 bay leaf
  5. 1 clove
  6. 1 cinnamon stick
  7. 2-3 drops lemon juice
  8. 1 green cardamom
  9. as required Salt to Taste
  10. as required Water
  11. For vegetables:
  12. 1/2 capsicum
  13. 1/2 carrot
  14. 1 piece cauli lower
  15. 3 tsp green peas
  16. 4 tsp beans
  17. 3 tsp curd
  18. 1 tsp red chilli powder
  19. 1 tsp coriander powder
  20. 1/2 turmeric powder
  21. 1 pinch hing
  22. 1 tsp kasuri methi
  23. 1 tsp biryani masala
  24. 1 tsp oil
  25. 1 tsp cumin seeds
  26. as required Salt
  27. as required Water as required
  28. For assembling:
  29. 1 tsp ghee
  30. 4 tsp fried onion
  31. 2-3 tsp milk
  32. 6-7 threads kesar
  33. some Garnish: fried kaju, kismis & fresh coriander leaves

Steps to make to make Matka Biryani

  1. Wash and soak rice for 10 minutes. Soak kesar in milk. Chop veggies as required.
  2. Boil water for rice. Add bay leaf and khada masala, salt and ghee in it. Cook till its 80% and then strain it to cool down. You can add cold water to stop the cooking process.
  3. Take a wok, add oil and fry the chopped onions. In a bowl add curd and all masala for marination.
  4. Now add all chopped veggies, mix them well and give rest for 10 minutes. After that in a wok fry them till 80% cooked.
  5. Now take a matka and put rice and spread its layer. Now put a layer of vegetables. Repeat the same for 2nd time. Take a tadka pan, add ghee and fry the dry fruits.
  6. Finally put fried onions, kesar milk and fried dry fruits. And cover the matka with aluminum foil and cook the biryani on low flame for 10 minutes.
  7. After that open the cover and you will find the delicious and aromatic biryani is ready to serve. Serve it hot with papad, salad and raita of your choice and enjoy😊
