Mostly I made yakhni pulao with beef ,some time with mutton and both tastes are finger licking good ,my all family and friends love it so much ,I serve it with sald ,raita and achar.

  2. 750 gm basmati rice
  3. For yakhni
  4. 1 onion whole
  5. 1 tbsp ginger garlic paste
  6. 2 tbsp fennel seeds(soanf)
  7. 2 tbsp coriander seeds(sabit dhania)
  8. 2 star anise
  9. 4 green cardamom
  10. 2 big cardamom
  11. 1 tbsp cumin seeds
  12. 1 tsp black pepper corn
  13. 4 cloves
  14. 1 piece cinnamon stick
  15. 2 bay leaves
  16. 1 tbsp Salt
  17. 4-6 green chillies
  18. For gravy
  19. 1 tsp Black cumin seeds
  20. 1 tbsp ginger garlic paste
  21. 1 tsp fennel seeds powder
  22. 1 tsp Black pepper powder
  23. 1 tbsp green chilli paste
  24. 1 cup yogurt
  25. 1/2 fried onion
  26. to taste Salt
  27. 1/2 cup cooking oil or ghee

Instructions to make to make Mutton yakhni pulao

  1. Wash the meat,put spices at one place
  2. In a muslin cloth tie the coriander and fennel seeds together to make a spice bag.
  3. Put altogether with meat and 8 cup of water and cook for 1-1/2 hour until meat get tender.
  4. Now take out meat from yakhni and strain the yakhni.keep aside.
  5. For gravy heat ghee in pot add Black cumin and ginger garlic paste,add cooked meat and fry well
  6. Now add yogurt,green chilli paste,black pepper powder,salt,fennel seed powder and fry for 3 to 4 mints
  7. Now add prepared yakhni according to your rice,bring it to boil,now add soaked rice in it and mix it and cook it till the rice are 3/4 cooked and water is dried.
  8. Add fried onion and put a lid on it and put it on dum for 10 to 15 mints on very low flame.
  9. Serve it hot with achar and salad
